Pretty Pink Chia Parfait
1 cup coconut milk
3 tablespoons white chia seeds
1 tablespoon pure maple syrup
2 teaspoons vanilla powder
3 teaspoons Pitaya Plus, thawed
Topping with: ‘Nola Mix
Add all ingredients, except Pitaya, to a Mason Jar.
Shake well, then seal and refrigerate overnight.
Separate the chia pudding into thirds.
Mix 2.5 teaspoons of the thawed Pitaya with one part of the chia pudding to dye a vibrant pink.
Mix another part with 1/2 teaspoon of the Pitaya for a lighter pink.
Leave remaining portion of the white chia pudding as is.
Layer the hot pink, light pink, then white chia pudding in a parfait cup.
Top with ‘Nola Mix and enjoy!
